MAHI MAHI (Coryplaena hippurus)
Mahi Mahi, the Hawaiian name for Dolphin fish, has a mildly pronounced flavor with a texture similar to swordfish. The meat is firm but fork-tender, with large moist flakes. Mahi performs well on the barbeque, is popular on sandwiches, and as a center-of-the-plate protein. |
